Melting Potatoes

These are the absolute best things to make if you're entertaining or just have someone to impress! These are one of the best potatoes I have made; they definitely live up to their name: Melting. Melt in your mouth served great with a fancy entree or even the most simple dishes!

When cooking for myself I am a very difficult person to impress with food. I get bored easy with the flavors and textures, but that definitely doesn’t happen with this amazing side dish!



5-6 potatoes cut into 1 inch slices

3-4 cloves garlic

Avocado oil

2 sprigs rosemary mince

Salt and pepper to taste

5 tbsp butter

1 cup chicken stock

Mix potatoes, garlic, herbs, salt and pepper together in a bowl until combined, line a baking sheet with parchment paper and lay potatoes flat along with garlic cloves. Roast for 30 minutes at 400 degree oven then flip. Add chicken stock and cubes of butter. Roast another 25 to 30 minutes until tender.

As these do take some extra love and time to make, they are a million times worth the effort. The rosemary adds an absolute wonderful flavor and aroma while you're cooking these; your neighbors will be asking you for the recipe
